STEP 1: Gather ingredients. Fresh veggies of your choice – I use mushrooms, broccoli slaw, yellow onion, cauliflower, fresh garlic and spinach – plus brown rice noodles, spices and seasoning, and a pre-made stir fry sauce.
STEP 2: Cook the noodles according to directions on package. *Helpful Hint….do not break up noodles, they will go everywhere! Just drop straight into pot.
STEP 3: Sauté the veggies (in olive oil) while the noodles are cooking.
STEP 4: Combine cooked noodles and veggies in pan, and add sauce. Mix until all are combined.
STEP 5: Top with cilantro or parsley and enjoy.
